Emma's answers to Storing cake
Question
How best do I store the top tier of my wedding cake?
Answer
With fruit cake, if it hasn't been cut into at all, wrap it in greaseproof paper, then in foil and store in an air tight container. If it has been cut into, the best idea is to remove the icing and marzipan, wrap in cling film and then foil and store in the freezer.
The cake should then survive for years, but its final taste will completely depend on the initial ingredients and how it was baked.
A sponge cake unfortunately won't last so is not the thing to choose if you want to keep the top tier.
