Margarita
Recipe from: Malmaison Hotel, Piccadilly, Manchester
- 2oz Tequila
- ½oz Triple Sec
- ½oz simple sugars or gomme
- Juice of ½ lime
Shaken and poured over crushed ice. Served in a salted glass.
Pimms no 1
Recipe from: Hurlingham Club, Ranelagh Gardens, Fulham, SW6
- 50ml Pimms No. 1
- Lemonade
- Slice of orange
- Slice of lemon
- 3 cherries
- Mint
- Cucumber
Fill tall glass with ice cubes and add Pimms, fruit, mint and cucumber. Top up with lemonade. Alternatively, half fill the glass with lemonade and fill to top with ginger ale.
Tequila mockingbird
Recipe from: Harvey’s Restaurant, 12 Denmark Street, Bristol
- 1 measure Tequila
- 1 measure freshly squeezed lime
- 1 measure mint cream
- Caster sugar to taste
Shake together and serve in Martini glass. Serve with slice of lime.

Classic Champagne cocktail

- Brown sugar cube
- 1/3 measure of quality brandy
- Champagne
Absolutely crushed

- 1.5oz Absolut Citron
- 3‐4 kumquats
- 2 teaspoons soft brown sugar
- ½oz lime juice
- Float Manderine Napoleon
- Float gomme
Serve in large rocks glass over crushed ice
Gibson
Recipe from: The Morrison Hotel, Ormonde Quay, Dublin 1
- 1/3 Martini Bianco
- 1/3 Gordon’s Gin
- 1/3 Smirnoff
Serve in a Martini glass, either on the rocks or straight up.
